Grilled Chicken Pasta Salad With Cashews
A quick, healthy and low fat meal that's perfect for summer. Pasta never looked so good!

Ingredients
- 2 chicken breasts (skinned)
- 250g fettuccine
- 150g snow peas
- 100g broccoli
- 4 spring onions, chopped (both green and white parts)
- 1 tbsp chopped parsley
- freshly ground black pepper
- 60g roasted unsalted cashews (split)
Dressing
- 1 lemon (juice)
- 1 tsp grated fresh ginger
- 1 tbsp chopped parsley
- 1 tbsp French mustard
- ΒΌ cup water
Method
Grill the chicken and then cut into strips. Allow to cool.
Boil the fettuccine in a large saucepan of boiling water until al dente (about 10 minutes). Drain and then rinse in cold water, then drain again.
Boil snow peas and broccoli. Drain them then rinse in cold water and drain again.
Place fettuccine on serving plate. Top with snow peas, broccoli, onions and chicken strips. Add dressing, sprinkle on black pepper, then top with cashews.
